If someone sends you a spreadsheet, or even if I start my own, can I enter a command that has Excel reorder the names alphabetically?

Every time I open a spreadsheet that I have previously saved, it will change the currency from £ to $. I have formatted the cells etc prior to saving.
Very frustrating - any suggestions?
Also program randomly crashes - even more frustrating.
