what is the shortcut to change bold letters to not bold?

as of now i have to go to the formatting pallette and click on B to
uncheck or check the B(bold) sign inorder to get bold or not bold.

Word's Help is your friend :-).  Search in Help for Keyboard Shortcuts and
then "Keys for formatting characters and paragraphs"

Try Cmd+B to toggle bold on/off - if you want to apply or remove bold from
just one word you insertion point need only be in the word. If more than a
single word, select the text first.

And another fast solution, if more than one word is involved so CyberTaz's
quickest-of-all solution can't be used:  Save time by not selecting the
specific words. Just quickly drag diagonally over all the text surrounding
the offending words (provided you don't include any other words that have
been manually formatted with bold, underline or italic) and key
Control-Spacebar ­ which is one of the keyboard shortcuts Beth referred you
to in Help. This strips selected text down to the characteristics of the
underlying paragraph style.

I do this all the time.
