Help needed with TOC

This is the first time I've tried to make a Table of Contents and I'm
stumped. In the body of text, I've set up and formatted with Header 1,
Header 2, Header 3, and as instructed in my Manual I've gone to the
Options and set those up for the template. However, no matter what I
do, it always gives me totally different formatting.
Could someone advise me of a good help page that'll help me sort this
out?

One more thing I'm wondering about is whether the TOC automatically
updates if the headers change pages. I thought it did, but it doesn't
seem to.

Unfortunately you've not disclosed what version of Word, what operating
system or what you mean by "totally different formatting". This type of
detail is imperative for anyone to offer valid replies because it can make a
very big difference as to what may be useful & what may be sending you on
the proverbial wild goose chase:-)

If you are using a Mac (that's the group you've posted to) please come back
with the pertinent information. OTOH, if you're using some version of PC
Word you'll find the group you need on this page:

I think you may have misread the manual :-)

The formatting of the Heading 1, Heading, 2, Heading 3... Styles controls
only the formatting of the headings in the body text of the document.

The formatting of Header 1, Header 2, Header 3 styles controls the
formatting of the text in the running headers and footers.

To control the formatting of the Table of Contents, you must do two things:

1)  You must insert the Table of Contents with a format of "From Template".
Any other format causes Word to discard your formatting and use its own each
time the TOC updates.

2)  Having done this, you must then adjust the formatting of the TOC 1
through TOC 9 series of styles to your requirements.

The TOC generator finds all the Heading 1 Headings, copies the text (only
the text, no formatting) into the TOC and formats them with the TOC 1 style.
It fins the Heading 2's and formats them with TOC 2 style, and so on, down
the nine levels.

No, the TOC does not automatically update (ever).  You must either manually
update it, or set the option in Printing options that causes it to update
when you print.
