There are no longer any offers from Microsoft for trials of Windows XP
that you can install...it's over 5 years old.

Guess that explains it. I found something on their site where you can download it or get a CD with it on it.....that old too?

There is a trial for Windows XP x64:
http://www.microsoft.com/windowsxp/64bit/facts/trial.mspx

I'm not sure if that will work with Bootcamp though.

What are you hoping to find out with the trial?  XP works with
Bootcamp.

It will but there are no 64bit Mac drivers for Windows.

I used to have a 180 day XP Pro Trial CD I got at a Microsoft event just
when XP came out.  License expired after the 180 days and could not be used
again after that date.  Ended up in the recycle bin long ago.
