There's a help page in VPC that outlines some things you can do in XP to
speed up it's response time. With only 768MB of memory, you're limited
to half of that for VPC which may not be enough. My version of VPC with
W2K on MacOS X 10.4.9 runs much faster than XP.
Some things you might do are
- upgrade your memory to the maximum your machine can hold
- upgrade your OS to 10.4
It's your call if this is a route you want to take. If not, my guess is
you'll have to live with the performance you've got.

With the Mac already having 768MB RAM in it, this isn't really going to
help, especially since VirtualPC has a limit to what it can use anyway
(and setting it to use less can often make it run faster).

Another option:
- upgrade your chip or entire computer to a G5.
(or even upgrade to an Intel Mac and get rid of VirtualPC, and
instead use BootCamp or Parallels Desktop)
