Some sites, for example online chat rooms, require Java. Do I need to
install this separately? I think I read somewhere that MS doesn't
include it with Windows anymore.

You do you have to install Java yourself in XP and Server 2003.
There are two versions, the old Microsoft JVM, v1.1.x which is no longer
available and proper Sun Java at version J2SE 5.0_05 or so. Both work
in Internet Explorer.
You can install Sun Java yourself at http://www.java.com/
If you need the old Microsoft JVM, you have to search for it as
Microsoft no longer offers it for download. Then after you find and
install make sure you run Windows Update to get security patches. The
final version you end up with is like 5.0.0.3810.
The version you need depends on how well the site was coded. Really old
chat apps will require the Microsoft JVM, modern ones will work with Sun.
