Most OSes allow you to override the MAC address of a NIC, assuming the
NIC allows this. VPC's NIC allows you to do this...I've done it in
Windows XP and it seems to work.

Also, if you're feeling couragous, you could mess around with the
config.plist file in the package for your virtual machine. There is a
specific line for the card address, but there's never been any
documentation on the particular format you need to enter. This would
techincally change the MAC at a hardware level.

I would not mess around with Mac plists only to have Microsoft break
your config in VPC 7.0.x or 7.1 or worse with OS X 10.4.3 or Leopard, etc.
Play it safe and change the "built-in MAC" in software. To do this in Linux
you can use this wikipedia article: http://en.wikipedia.org/wiki/MAC_address
or on Windows you can use Steve's method or a product called SMAC
