Does anyone know if it's possible to embed the VPC7 license key into
the installer, so that I can pretty much have a double-click installer
without having to give my users the license key?

Abe,

You may want to check with your Volume Licensing Manager.  I know they have
versions of Office 2004 that already have the Product ID information
embedded.  They may be able to provide versions of Virtual PC 7 for you
also.
