The only aspect ratios offered in RDC are 4:3.  Is there any way of
either adding a set of resolutions in 16:9, or a custom resolution
(which one could set up in 16:9)?

Not at this time.

You can send feedback to the developers on this issue. Use the last menu
item under the 'Help' menu - "Send Feedback on RDC". This message will go
directly to the developers. The more people that request this feature the
more likely it is to be implemented.

If you save connection settings, you'll notice that the file is just a
text file that includes two lines (from a 1024x768 connection):
desktopwidth:i:1024
desktopheight:i:768

You should be able to adjust those numbers to give the screen
resolution (at whichever ratio) you prefer.
