Hi Jeff!
Is your non-working Mac client using a Postscript printer? Granted, the
8500 PPD is for a Postscript printer, but what printer device is he
actually trying to use?
Also, is the Mac trying to share a locally attached printer (via USB or
similar) to the server or trying to share one of its network printers?

The problem has been isolated to only the "new" Intel based MACs, all others
on the same network accessing the same printers are working. This is
affecting ~15users trying to print to any of ~12 network printers. 2 models
are HP4350, and HP1320 laser, I don't think it has anything to do with the
printer but the way RDC communicates with the "new" MACs. I don't know much
about MACs only that these have another layer called rosetta, not sure if
there is a problem with it and RDC?
