My Xcode seems to have change I did have a unique window for each file
i opened in Xcode.  Now this has changed, how can I change this back or
is it some kind of bug ?

Close your currently-open projects.

Open Xcode's Preferences window.

In the General pane of the Xcode Preferences, change the Layout pop-up
menu to either "Default" or "Condensed" from "All-in-One".

Is there a way to reset all such preferences to the default.

It is already set to default, so that is not the problem.

If it's any consolation I've been noticing the same problem here with
Xcode 2.3. It's really annoying.

Ahha, forget the preferences, try the group / ungroup icon switch on
the top right of the editor window ;)
