Full Page Images Covering up Slide Numbers...

I have a number of full page images that naturally cover up the slide number
which is on the master.

Is there anyway to have that page number appear over the image? At the very
least, is there a way to insert an auto-updating page number text box on
that slide (that will calculate and display the correct page number and not
just be static)?

Try this:

View, Master, Slide Master
Select the Slide Number placeholder and choose Edit, Copy

Switch back to your slide in normal view
Choose Edit, Paste

My interpretation is that you are using a variety of images on different
slides in the same presentation, but I'm unclear as to how you are currently
making them 'full page'.

Have you tried using Format>Slide Background, click the list button & choose
Fill Effects. Then click the Picture tab, hit the Select Picture button &
pick your image for the slide. Once you click Insert, click OK, then click
Apply. The image will be sized to cover the entire slide but will be
overprinted by the Master Slide items.
