Hi Eric,
what you're experiencing is kind of strange. Here's what the Entourage Help
site has to say about error (-30588):

Basically, you shouldn't be getting this error, since I assume you didn't
use Office v.X before. Very strange. I'd suggest removing Office completely
(with the uninstaller that you can find in Applications/Microsoft Office
2004/Additional tools/Remove Office), then re-installing it and applying all
the updates. Also, repair your permissions before and after re-installing
Office using Disk Utility in Applications/Utilities. Try this, and if the
problem still occurs, post back.

To add to Michel's advice, here's the information I have on that error, even
though I've never seen it myself:
This is a known issue that is caused by viewing complex HTML messages prior
to opening the Accounts window. You can work around it by re-launching
Entourage and then editing your account before opening any complex HTML
messages.

Mickey's post is consistent with my experience, when I re-launch Entourage
after viewing some HTML messages, I can edit Mail accounts without trouble.
Overall, as a previous Win Office 2002 user, I feel that Entourage and
Project Center let's me concentrate more on my work and less on the
application (which was not the case with Win Outlook 2002 for me).
Thanks for the help!
