Interesting suggestion, but I've solved it now.
I ran TechTool Pro and it found that the OE 'Index' file for each
missing mail account was 'damaged and could not be repaired'. (i.e. in
the Outlook Express folder - OE User: Main User: Cach: 'email address'
folder: Index* )
I removed the damaged file, openned the OE Preferences window and
typed in my email account settings, and now everything seems fine.
I do wonder though, if I have lost anything by delelting those damaged
files?
Thanks for your reply.

A good one to note. To answer your last question, deleting anything from
the cache should have no impact on the mail data that has already been
stored.
