Frequently, when my MacBook Pro is fully charged, the green light on the
plug goes out.  Re-plugging turns it back on, but why does it go off?
Help says it should either be amber or green.  Could one of the
connectors be oxidized and should I worry about this?

I just realized I should probably have posted to the portable group as
well or maybe even instead.

Reset the SMC.

I typed "reset SMC" and just "SMC" into OS X Help and got back

No pages with your search words were found

I then "googled" "reset SMC" and got a reference to an Apple Support
Article.  Interesting.

<verbose>
For an Intel Mac portable:
- remove AC adapter (and other cables)
- remove battery
- with _no_ power source attached, hold the power button for 5 seconds
- restore battery & AC adapter

This is the cure for many power & sleep issues.  It may also resolve
"missing" hardware problems (e.g. the system doesn't think it has an
Airport card or firewire port).
