The apple specs say it will support up to two GB. Does that mean two one GB
or can I use one twoGB and leave the second slot empty?

The details really depend on the specific model (and should have been
noted in the user manual) but at least in the case of my MacBook it's
1GB per slot.

Open System Profiler (Apple menu, About This Mac, More Info)  and check
the model of MacBook you have.

If it says 1,1, then it's 2GB, model 2,1 is 3GB (you can fit two 2GB
sticks), if it's 3,1 or 4,1 you can fit 4GB.
