Mac OS X Server delete

I've got a second hand G4 from a business sale that has the server on
it.
Unfortunately I have no username or password and can't get in.
I do have OSX install discs but it tells me I can't overwrite the old
OS.
How can I get rid of the old stuff and do a new clean installation?

When you boot from the install disks, once the installer finishes
launching there will be a menu from which you can get at other
facilities. One of those is the disk utility app, which you can use to
wipe the volume.

Thanks, but no such menu appears.
There are two HDDs on the system.
One is presumably for the OS and the other RAIDed.
I'm installing on the RAID, although I've no idea if it will do any
good.

The menu only becomes available just before the instal begins.

When you see that message, it will tell you that you can not install
over the existing installation unless you click the Options button and
change your install options. Click the Options button and change your
install options.
