Make sure it works under the Mac OS X, though. - The demo is only for Mac OS 9.
It seems me though that this product consists only of a standard keyboard
(though one is cut in half to save desk space) plus a special keyboard
map.
Then one should be able to create the keyboard map using Ukelele, as Wes
Groleau suggests in another post in this thread, and use ones standard
keyboard. This seems a good idea to try first!

Same problem with the Inforgrip Bat keyboard. I used that under OS 9,
but they never released an OS X version. They told me I could buy the PC
version which uses USB. Right. Spend another $200, on something I
already have....
It's a nifty keyboard, though.

Have you tried what it is that is not working under Mac OS 9? If it is
that it is not using USB, then, unfortunately, everyone must get a new
keyboard. But, apart from that, the keyboard probably just sends standard
keyboard numbers for the keyboard map to translate. And keyboard maps can
be developed using Ukelele <http://scripts.sil.org/ukelele>.

Have you tried using sticky keys (under System Preferences, Universal,
Keyboard)?
With sticky keys enabled, the modifier keys "stick" on the initial
press, you (for example) can sequentially type Shift then a number key
to get a symbol.
A single press of the modifier only sticks once for the next
non-modifier key.
Two presses of the modifier locks it for all subsequent keypresses,
until you press the modifier again (to cancel it).
e.g. you can type Shift Shift 1 2 3 and get !@#
It has optional audible feedback and on-screen display of which
modifiers are active and locked.

Have you tried
System Preferences -> Universal Access -> keyboard -> Sticky Keys
This should allow one handed operation.
Of course if you have already tried it, and discarded the idea,
then please disregard this suggestion. Not all approaches to a
problem are suitable for everyone, and personal preferences count
more than someone else's idea of how to do something.

If you don't like any of the other responses, create a keyboard map to
do it. You can use a tool like this:

or edit the file directly. If it's too intimidating a task for you,
I'll do it for ten dollars U.S.
