mac mini (intel) memory

I have an intel duo core mini with 1 gig of memory. Can I replace one of
the 512 chips with a 1 gig chip now and switch the other one later?

You can do this, but the consensus is that performance is better if both
memory channels are configured identically.  So, your second 1GB module
should match the first - and this might be more difficult to accomplish
if you don't buy the two together.  Not sure what characteristics are
most important in "matching," though - maybe someone else can add to this...
