Yep, I don't understand this one bit, it seems utterly ridiculous to
require that you have an iPhone in order to sync address book contacts.
Still, there must be a way to enable it, hopefully someone will find
where the setting is hidden...

unfortunately, it only syncs when you sync your iphone. or possibly a
recent ipod. it certainly doesn't "just work" by all accounts. grr.
sync to gmail contacts and calendar would be great.

One of the comments says you can do it if you've done a .mac sync, so
you could try signing up for a .mac trial and then seeing if the Google
option appears.
And yes, a Calendar sync option would be fantastic, still, the calendar
syncs with my Nokia and my iPod nano, so I've always got it with me in
one way shape or form...
