I can't help with the aTV software, but you can wedge a real OS X
install into an aTV (nondestructively) if you want to go down that
route. Or use a Mini.

The Apple TV would be preferable to a mini for a few reasons (except
that it won't loop AFAIK).
It's smaller, doesn't have an external power supply, it's cheaper and is
designed to be controlled by its remote. Bear in mind that the player is
likely to be mounted with the projector hanging from a gallery ceiling.
The closest I've got with a mini is to use a playlist in iTunes and
enhance Front Row with Sofa Control. Unfortunately I've had problems
getting iTunes to consistently play the playlist full-screen, without
using a keyboard/mouse. I've also never tried running movies in iTunes
for days at a time.

I'd be tempted to burn your loop onto a DVD and use a normal DVD
player.

That's the usual method but only standard definition. I can't understand
why Apple doesn't let the ATV loop - would be a neat gallery/kiosk
solution.
