The closest you can get natively is to untick the "include this
account when automatically collecting mail" and collect it manually
now and then.
Is there a real reason not to collect mail out of hours? Because the
easy answer is to leave it going and just ignore anything that
arrives...

Assuming you've done that by setting up two accounts in Mail, can't you
just take the work account offline at 6pm and bring it back online at
8am?
Mailbox > Online status > ???

Thanks Chris, I suppose I could do that, if mail comes in I will end up
answering it, an automatic kick off would mean I'd actually stop working
though :)
