Use a VNC client, such as TightVNC, RealVNC, UltraVNC, etc...
On the Mac you can enable Apple Remote Destop (ARD) in the System
Preferences -> Sharing.
Alternately, you can run something like the Vine Server (aka
OSXvnc server) if you do not like the ARD server built into the
Mac, or even X11vnc.
An alternative might be a service such as LogMeIn.com, especially
if you are going to access the Mac over an unprotected internet
connection.
The VNC protocol itself is not encrypted, but if you really want
to get your hands dirty, it is possible to run VNC over an ssh
encrypted tunnel.
