I keep hoping something will "break" so I can get a new one and just use it
for an extra drive. Half its space right now is just files. Now I'm curious.
Can it be reformatted so it thinks it's just a drive? So that it mounts in
Finder quicker? Or is its "iPod-ness" built-in (firmware?)?

Don't know about that... I wanted to install 10.4 onto it as a sort of
life saver, just in case, but it wasn't recognized as a bootable drive.
I tried to use it as a SuperDuper! target, but no joy. i guess it's
only good for basic storage, but I'd like to be able to boot from it if
needed. I'd bet that someone at XLR8yourmac or macfixit knows how to do
it...

The tool you want is "DasBoot" available from VeersionTracker. The
iPod's disk drive isn't intended for heavy use but I have booted from
mine and run DiskWarrior to repair an iBook while on the road.
