I have been told by Intuit tech. support that Quicken 2005 users must
have Admin privileges just to run the application (at least under OSX).

Hard to believe anyone would tolerate so un-OSX a product. The
possibilities of accidental damage to system files seems to great.

Is this really true?

Intuit tech support? Boy are they a set of hosers. Quicken 2005 runs
peachy keen on a non-admin account. What they probably meant to say was
that, yes, you do need admin privileges to INSTALL the application. That
is standard procedure on any true multi-user system. Only admins get to
install anything; or non-admin user if they have an admin password in
their possession.

Again, Quicken 2005 runs fine on a standard (non-administrator) account.
