I don't think you can do that directly. However, you can do it in
QuickTime.
Caveat: I've got QT Pro, and I don't know whether this feature is
available in the Player version, but I rather suspect that it is. If no,
you have to decide on the issue of a $29.95 Pro key... ;-)
(It's worth it to a lot of us because of a huge number of nifty things
like this, including the ability to show QT clips full screen.)
In iTunes:
Select the track and do a File -> Show Song File (Apple-R)
Drag-and-drop the file onto QuickTime Player to open it.
In QuickTime Player:
Do File -> Export and select the relevant options in the bottom of the
dialog box.
This was done on a 10.3.7-8 setup with iTunes 4.7.1 and QT Pro 6.5.2.

I had to go Pro to get this feature. That's slick. Thank you.
When I open the file in Audacity, all indications are that it is a mono
file. But it is 3.1MB, just like the original file, so I don't
understand that. T-L
