How to change image in iMail 2.1.3

I noticed an image in my "sent" emails going out to everyone has a pic
dredged-up somewhere from PhotoBooth. Its located in right side of
Header bar. How do I update the image... or better still, change the
image? I didn't notice anything scanning around in Preferences.

I'm pretty sure that's your user account picture, which can be changed
in System Preferences > Accounts.

First the application is just Mail.app not iMail, and the picture is
found under:

System Preferences / System / Accounts / Picture /
