At one time there were significant numbers of people who complained
about the impersonal nature of printed Christmas cards - with
hand-written notes and such. Hallmark was a target of their
accusations of destroying Christmas. But such conservative values
get forgotten by the next generation who have their own concept of
Rightness.

Thanks for the tip about Ambrosia.
I wish I could write the addresses, I do write notes/letters inside.
However, my writing can be poor at times & I want the card to
actually show up to it's destination in Myrtle Beach, SC,
Louisville, KY, Toms River, NJ, etc. Making the post office
decode my writing means it could get delayed/mis-directed.
This also means I can spend more time writing the inside
note.
My cousin (Atlanta, GA) sends out a news letter every Christmas
with hand written envelopes.

I've installed Easy Envelope and I love the interface. Unfortunately
it doesn't do quite what I was looking for. For example, John & Debbie
have two kids, Megan and Grant. The address book entry is
_John & Debbie_ _Smith_ (how to signify John & Debbie are both
contained in "First"?)... That's why I was looking for The Smith Family.

There is no time like the present to put your address book into a
usable state then. That sounds like the real problem? I doubt there is
any program that can do what you want because a program can not know
what you want done and how.

On the PC I could do this with a kluge called Mail Merge...
Open MS Word, use Tools -> Mail Merge, fool with this
tool for what seemed like an eternity (put "The " on the
first line, then the last name, etc.) Mail Merge was
really designed to send out form letters
"Dear Mr/Mrs. Smith are your insurance rates to high?"
It was possible, but it was a pain in the butt!
