Hello,
I have a question concerning my several accounts in Apple Mail.
When I send an email I can adjust which account the email should be
sent from.
My problem is that I often forget to adjust the sender account. Is
there a possibility that Mail asks me everytime I want to send a email
from which account I want to send it?

I don't think there's any built-in way. There's a Mail Help topic on
how Mail chooses the account to use.
Maybe you could write an AppleScript that starts a reply and pops up a
window asking you for the account to use.

Mail defaults to the account you are sending from so by just selecting
the correct account in from your Inbox list will automatically use that
account as the sending from address. No adjustment is then needed.
For example I have two accounts one personal and one business, when
emailing my mother I just click on my personal account name in the inbox
create a new email and send the message. When I'm sending out business
emails I click on my business account name in the same Inbox.
