Control-U (I think) does "f2".  Don't know about insert date.

I took several sources of Excel keyboard shortcuts (mostly
Mac-specific, but some others) and combined them into a spreadsheet
that you can get here:

   http://briefcase.yahoo.com/bc/sonogod/lst?.dir=/Public

There is a slight chance that a few of its 415 entries reflects local
settings on my particular laptop, but it should easily pass the "80% is
perfect" rule.
