You need to command-click on a space between two icons (basically where
you want the new icon to go) and you'll be offered the option to remove
the icon. if you want o ADD one, find the menu item in the menu, i.e.
command click, ignore the box, but go to Edit > Spelling > Spellcheck
Message and the item for spell checking will appear.
Not v intuitive, I admit...

Eudora 6.2.4: Help > Modifiers & Shortcuts (about 1/4 of the way down
the page):
"Command + click between two toolbar buttons
Add a new button to the main toolbar.
Command + drag a toolbar button elsewhere on the toolbar
Move a button on the main toolbar. (Drop the button between two other
buttons or at either end of the toolbar.)
Command + drag a toolbar button to the Trash (on the Finder)
Remove the button from the main toolbar.
Command + click on a toolbar button
Change the function of that main toolbar button.
Shift + click on an item"

Jim Gibson already answered, but in addition to the various guides and
help that you download with the Eudora application, there is also an 8.2
MB PDF User's Manual that you can download separately from the Eudora
website. Just mentioning it for the benefit of any who weren't aware
that there's a much more comprehensive manual available than what you
get automatically when you download the application.
