That does not do the trick. I have deleted some of these names from my
address book, but they still show up in the "Message" tab.

Remember to save the changes when you close the address book.

In the address book entry for the particular person, uncheck the box for
"Recipient List." If you have deleted the name from the address book,
add it back in and uncheck the box. Once the name is gone from the
recipient list, delete the name (again if necessary) from the address
book.
