How do I make all my replies in Entourage default to this color blue?

There is no setting. You would have to create a draft message and use it as
a template.

That answer can not be right to my question.  I know I get replies from my
work colleagues and there replies and new composed emails
come in a specific font and color.  Is there no way to set the font color
like choosing stationary etc so that when you compose or reply to an
email it will always do so with the same font style and color?

In Entrouge....Just below  the attachments area
you should see (from tools)   font/font size: BI, etc...the opetion
for FL, Ctr. or FR, color of font , etc..
