Recently received an email from a co-worker using Outlook '07 who added highlighting to some text. Opening the message in Entourage, the highlighting was missing. Had to log into Exchange through Web Access to view formatting.
Is there a setting I missed?

Yet another example of why HTML in emails is a bad idea. You can never
tell if the recipient will be able to actually see your pretty colors
and text styles. Plain text is always the best choice for email.

Send responses to the relevant news group rather than email to me.
E-mail sent to this address may be devoured by my very hungry SPAM
filter. Due to Google's refusal to prevent spammers from posting
messages through their servers, I often ignore posts from Google
Groups. Use a real news client if you want me to see your posts.

No, but I've received emails with highlighting from Outlook users OK.
