> This is driving me nuts. I can't figure out how to stop Entourage from opening automatically every time I start up my computer. I have looked at all the preferences and I can't find it anywhere - where to turn that thing off.. Help?
I should have mentioned, it is after "login" to the computer, and when it goes to desktop, Entourage opens automatically. I want to make it stop doing that.

After Entourage is open, find it in the dock, and click and hold on its icon
there. Then deselect "Open at login".
Or go to System Preferences -> Accounts and delete Entourage 2004 from your
list of Login Items.
FWIW, I like having Entourage in my Login Items. Using the Energy Saver
Preference, I set my computer to start up every morning. By the time I get
to it, it has downloaded all my e-mail and I don't have to sit and wait for
it to do its startup procedures.
[As a Tiger fan, I can't believe I helped someone named "redsox58"! ;-) ]

right click on the dock icon for Entourage. Is 'open at login' checked?

I have exactly the same problem with office 2004. Open at login is not checked in the dock. Entourage had been a startup item but I removed it from my login items in system prefs.
