Is there a way to edit the user dictionary? I can'it seem to find a way to
do this and yes, when I type an apostrophe it, it fills is with 'it.

Hi Perry,
It sounds to me like your problem has something to do with Tools |
AutoCorrect, rather than a dictionary. Look for an entry that replaces
' with "it".
